FAQ

Where does the default 0.6% salinity come from?

It's the widely accepted target for soups and simmered dishes, on the light side. You can raise it to standard (0.8%) or full (1.0%) as needed.

How is the salt content of soy sauce and mirin calculated?

Each seasoning uses a salt content percentage (per 100g). You can register custom seasonings with precise values for more accurate results.

What is cooking-mode correction?

Simmering evaporates water, concentrating salt, so the output is reduced. Steaming adds condensate, so it's increased. The tool adjusts automatically.
