Does the shape change with the fruit?

It does. The apple is round with a stem, the strawberry tapers to a point, and the grape is a cluster of berries. The candy colour goes over the top translucently, so each pairing looks different.

What is the amber option?

It is plain boiled sugar - the traditional uncoloured coating, closer to how candy apples looked before food colouring was common.
